Preparing zucchini fried rice is easy. Here are the steps you need to follow:

Add 3 tablespoons of oil to a pan and heat over medium heat. Add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 1 teaspoon each urad dal and channa dal, and 1/4 teaspoon each of Hing (asafoetida) once the oil reaches optimum temperature. The mustard seeds will infuse the oil with their distinct aroma as they sizzle. Then, add 7 to 8 curry leaves and 1 small slit green chilli. Saute the seeds for approximately 30 seconds, savouring their fragrance. Add dried, desiccated grated coconut and sauté on low heat for about 2 minutes, enhancing its flavour.

The next step is to add the zucchini, salt, and cashews to the pan. After absorbing all the moisture, cook the zucchini until it reaches a tender consistency. By adding salt earlier, the zucchini will be able to absorb more water. When the water has been absorbed completely, add the cooked rice. Over medium heat, stir and sauté the flavours for 3 to 4 minutes. Keep going intermittently to avoid sticking. Lastly, garnish the dish with 2 tablespoons of chopped cilantro, roasted peanuts, and lemon juice to elevate the flavour. Ensure the ingredients are thoroughly distributed by giving the mixture a thorough mix.
